Here in California where we have the strictest of emmissions laws you can remove the resonator. It adds nothing to emmission control and only serves to "tone down" the exhaust note. If the shops you're going to don't know what it is, here is what Wikipedia has to say about them:

A resonator is one part in exhaust systems that works with the muffler to reduce noise, by making sound waves "cancel each other out"[1]. The "exhaust note" is an important feature for many vehicle owners, so both the original manufacturers and the after-market suppliers use the resonator to enhance the sound
Sure seems to me that it would be something a decent muffler shop would know about.
