MercedesMe Connect, '19, I'm baffled!
I can't figure this out. When I make a voice command to "Navigate to" or "Call", sometimes Siri responds on my iPhone and sometimes the car's own Navi or Tel responds. How do I deactivate Siri so that only the car responds to these voice inputs?

I assume you are using the voice toggle on the steering wheel. A quick press goes to the Mercedes Command System and a longer press will go to a connected device.

Yeah you are pressing the voice control button too long. Quick press and release for COMAND voice control, press and hold for Siri/Google Assistant. This is a feature and is called Siri Eyes Free. Works on many cars and also works the same when using CarPlay/Android Auto.
