I want to try out this set up once my forgestars come in, but don't know if I should go with 265 or 255.
do you think I will rub with a 265/30 19x10 et 48?

I run 275/30 on 10x19 et 48 forgestar and was occasionally rubbing on H&R springs. Now with KW adjusted I don't rub. So you should be fine with 265 if your rubber is not too wide. Some tires have wider sidewall than others.

I am runnning 255/30/19 on 19x10 ET unknown. But the fitment is spot on.
H&Rs are at the lowest setting possible.
