I definitely get a HP gain from ethanol enriched fuel. But my car has been tuned for it. Cars not tuned for ethanol often experience minor detonation, due to ethanol being more reactive, this is resolved by the car retarding timing via information from the knock sensors.
On the flip side, my car runs somewhat poor on 91 (often backfiring hard). I learned this when I went on a road trip and only 91 was available, and it was off brand mystery gas.

I have AR LTH with xpipe and 3 inch cat back, ram air intakes and cf air boxes with high flow filters. Custom tuning . Light weight rotors and wheels for rotation mass and I'm at 470rw 435tq. My tuning is on point I log everything thru my zentronic system that's plugged to my exhaust . Tune and headers made 440rw. Stock 365. Dybo jet. 70° .fans not the greatest.

What matters is not the reading but the improvements.
I see you have run 10.9 at 128mph - dang - that's more than 500rwhp on some dynos right there. If my 507 can lay a 10 at 128 I'll settle for whatever the dyno says.

What tuning are you on? We tune very aggressive compared to most (our stage 1 is 540CHP).
it seems that peoples numbers are so heavily dependent on whom made the dyno. Don't forget altitude (air density) plays a huge factor on NA power output. We use a Dynocom Dyno, and have somewhat thin air up here in Calgary. I definitely feel the difference when I'm driving somewhere like Vancouver with very dense air.

I trust him on that because I would spend the money if he told me it was worth it. The only thing I might add to his tune is a leaner cruise tune, just because the car cannot average 10L/100km highway on trips and it would easily do that if I bothered to tune it for that. No biggie, it's not a cost issue, just know the engine could do it. My old LS1 could run 8.6L/100km in a heavier car.
Also, I'm at sea level in dense air, so my figures will be higher than yours

My tuner (Torque Performance in Auckland New Zealand) does not use chips, nor does he rely on base maps from competing tuners. He can download the factory tune and adjust timing and fuel to suit. So my tune is basically a custom one. They got on the money quickly - in and out same day. He said he didn't feel there was much more power on the table from laborious fine tuning further.
I trust him on that because I would spend the money if he told me it was worth it. I cruise at about 13/100 on the highway. My average trip economy is 19/100!!

Average is 17.22L/100km
and worst is 23.44.
Interestingly, on closed road Targa Tour events (which did include driving between stages at the normal speed limit) car averaged about 17L/100km despite a lot of wide open throttle driving between corners.
So on a trip driving quietly, my LS3 turbocharged motor would likely use less fuel. But under throttle, the M156 motor is very fuel efficient!

Off topic, but as we mentioned economy. My ML63 interestingly for the same driving is very close to the C63!

Now at 485rwhp. Makes that between 6500 to 7400rpm. Is AMG good or what?

Fuel? As car now run in - have achieved best of 10.03L/100km. This car will get the magic 30mpg/9.9L/100km in the right conditions. But right now I'm having too much fun to care

Unleaded Racing Fuel could be found nearby the last couple years. It is 104octane, I think . After driving it a while for computer to adapt the seat of pants feels like an extra 35 hp maybe a bit more. Advance timing came earlier and tires came loose a lot easier, not my goal by the way. I haven't bought any in a while. At nearly ten buck a gallon, I'd have to go back to work. The smell of racing gas coming out the exhaust is heady stuff. Makes you want to go to the track. IHRA of course with no brake out bs, or used to be that way, and lots of acetone etc in the gas.

Fortunately the AMG 6.3 is one motor that likes more octane from what I hear - so it'd seem a good idea to add water/meth IMO
Upside - ONE tune for pump gas unlike race gas that requires retuning to go back to pump.
Downsides - topping up on regular basis makes it tricky if travelling away from home. Also, only top shelf like ERL Aquamist should be seen on an AMG and you will need a warning light to show low level or blocked jet malfunction.
I do closed road events over several days so having to haul methanol around is a pain in the *** without a support vehicle. For the AMG I'll go heads if I can't get there with a higher flow filter and octane booster.
