I’m very soon putting my new c63 2012 in winter storage
I’m looking for tips and tricks on what to think about when making it ready and so on.

It’s going to be in a cold storage (no heating) The weather will go down to below -30 degrees Celsius here.

How should I prep it before I store it?

Should I start it every once in a while? If so which interval? (Of course not on the coldest days)

When it’s time to bring it out in the spring, is there anything I have to do or shouldn’t do to it then?

I store a few cars over the winter, but it is only about 3-4 months here, but typically I fill the gas tank full add fuel stabilizer and run it for a while ot make sure it is through all the lines. I put it on a battery tender the whole time. If you are storing it where things like rodents may be, then might be worth plugging any obvious places they can get to/put something that will repel them - bounce dryer sheets I have heard will work or moth ***** maybe. I also try to stop the tires from flatspotting, so you can jack and support it so the tires themselves don't have weight on them, the other option is that you can buy some plastic half moon shaped things to put the tires on that will prevent flat spots or I just try to move it so the same spot is not on the bottom all the time. I usually try to choose the warmest day once a month to start and run the car - the general rule I have heard is if you run it for more than 15 seconds, run it until warmed up/15 minutes, so I warm it up fully to operating temps then put it back away. Oh and clean it and put some good wax on it and I cover it with just a dust cover.

In the spring I generally just change the oil and go.

To add onto what roadkillrob said, to avoid rodents making your exhaust system their new home, put steel wool in the tailpipes. They won't be able to chew through it. Also, leave the windows cracked slightly (about an inch or so) that way can flow through and minimize any condensation forming from temperature differences (interior v. exterior)

Full tank of gas, resist not to start the car (It will be hard, i know ) and at those temps i would take out the battery so it will not freeze.
If it,s a isolated cold garage you can leave the battery hooked up to a charger.

At first start, don,t let i sit to get warm, just fire up wait maybe 10-15 seconds and start driving gently and have fun again.
