Valve Cover Leak or just the VC Gasket???
Still pretty new to this platform, but am feeling very good about what I need to replace in the next few years! Car has 85k miles now and definitely leaks some oil. Dealership said I need two new Valve Covers along with the VC Gaskets. Is there any way to check if it's just the gaskets and not the covers as well? With this mileage is it pretty normal for the actual Valve Covers to be leaking?

While you are doing the valve covers, plugs and coils could be done although no real reason to do coils unless they fail IMO, they last well unlike say BMW coils. Plugs dealer charges a fortune for and are easy to do yourself even not being very mechanically inclined. Definitely have the cams and lifters inspected for wear when the covers are off.
If you are going to tackle things around the intake manifold that is all worth doing at the same time, PCV needs the intake off to do, so do PCV intake manifold gaskets and inspect and or replace throttle body plate if needed. Injectors are a bit easier when you are doing the throttle body but also they are very easy to do stand alone as only the air boxes are in the way and if nothing else I would do the injectors at your mileage as they are known to fail and can cause a cylinder to flood with fuel and damage the engine.
One thing of note, if the dealer does it they will charge big money and order the AMG branded injectors but the bosch equivalents (bosch makes the amg branded ones) are only about 30-40- bucks each so get those and have an indy do them.
