CEL Code P0128
Note sure what caused it , aside the weather being 100+ then the next Day 60+
Should I clear it or take the Car in

Take the car in. This might be related to your earlier CEL. P0128 means your engine isn't reaching operating temperature as it should. Could be the thermostat stuck open or opening prematurely or your coolant temperature sensor not working.

I did not clear the code, it cleared after a Full tank of GAS.

These scanners dont seem to be that accurate

Harmless. Happens occasionally when temperature drops and it's very cold the next day and you start the car and take off immediately.

Stock or tuned?

My Coupe was hovering around 180 - 195

Yeah, that's normal. I was at 194 after a lap around the Nurburgring for example. It's in that neighborhood. As long as the temperature is indicated in white, it's within normal operating range. Blue is too cold, and red is too hot.

Dealer ran a DIAG, its a bad Thermostat.
MBENZ will Replace next week.

Until then I'm in a Loaner GLE 300
