I am looking at an oyster leather with the chestnut on a CL.
I have an sl right now with burl and java leather.
Do the lighter colored leathers have greater susceptibility to looking soiled?

I think the oyster/chestnut would look like great !!
I think the "Trick" way to go is with the Black Birdseye Maple.... However, this only is an option on the designo, but I would imagine the parts are available for a price. The Black wood may be too dark for a light interior however.
I have seen the chestnut wood in person and it is very pretty although it is a light golden color - similar to unstained maple or oak.
I think it looks really good with lighter colored leather but the contrast with dark colors might be a little "flashy" for my taste.
I have seen several older cars where the lighter colors have worn significantly. This is especially true of the bottom cushion on the driver's seat. Also, I am very particular about the carpets being clean and the lighter colors are very difficult.

Chestnut Wood
I hace a 01 CL500 with Oyster interior and Chestnut wood. Everybody loves the combination. I also have a 97 SL with the parchment (off white-beige) interior and dark wood like yours. It still looks like new. I find that the lighter wood Chestnut shows less dust and finger prints --- also is easier to clean. I live in Texas and it can get very hot during the summer months. I have always opter for the lighter interior colors and never have had a problem in them looking faded or dirty.

Listen: Yesterday I had to go to the dealer to finalize my order for a new SL. I saw two SLs with Chestnut. Although the color shade is very similar to the one I have in the CL the grain or pattern in the wood is very different from the CL Chestnut. In my opinion the Chestnut wood that they are putting in the SL is not as rich and nice as the one that comes in the CL. You might want to be careful which Chestnut sample your dealer shows you.
