Wider Rubber

I'm going with an 18x8.5 or 18x9 wheel and was going to either put 245's or 255's all around (I'm leaning towards the 245 on the 8.5).
Any reason why people haven't put wider rubber? I think the car would benefit a bit from it.

No issues with clearance with the rims. I have the 19 x 8 wheels for summer use, but they also come standard with 235 tires. Sorry doesn't really answer your question on tires, but wider wheels work ok as a starting point.

I played around a little bit with it moving from 235 to 245 to 255 while keeping and then reducing the aspect ratio from 40 to 35 and couldn't keep the same overall diameter. It was off by 1.3% - 2.3% so would throw your speedometer off by that much I believe?
