Optimum offset size?

Here's what I have:

19x8.5 35 offset 245 35 tires
19x9.5 40 offset 255 30 tires

Yea, SKINNY tires on the rear. Anywho, what would be the IDEAL offset for no rubbing/problems for this wheel setup? I hear 30-32 and 35-38, which means i need a 5mm spacer? Any suggestions? I guess a 10mm spacer wouldn't work? Thanks!

Sounds like 3mm would be about the right offset? Could I just pick up a universal 1/8" or 3mm spacer that fits 5x112 bolts? Any hazards w/ doing this?
