Newb with several cabriolet questions

Hello, everyone - this is my first post. I was originally planning on an 07 (or ‘08) Volvo C70 hard top convertible, but at a loaded price of around $48k, I started looking at alternatives. After visiting the local MB showroom and seeing used CLK cabriolets, I think I am hooked. I have a few questions. First one is about oil changes. After looking at the dipstick thread, it got me wondering if an oil change is something that I could have done at a Jiffy Lube type place, or is that a sacrilege? Next, I see that ‘04 or ’05 CLK500s seem to be just slightly more expensive than the 320s. Would a 500 be a lot more money to maintain? Third, what kind of gas mileage hit would I have by getting a 500 over a 320? If I had to guess, I’d say maybe 19-20 mpg with a 500, vs. maybe 22 or 23 mpg with a 320? Does that sound about right? Does a CLK require premium gas? And the last question: I seem to never see bright red used CLKs for sale (which I would like.) Are they really that rare, or do people snap them up quickly enough that I’m not seeing them for sale? Thanks in advance, people. I’m currently driving an ’04 Volvo S60R, which I love, but it’s getting long in the tooth. Before that it was an ’01 325i. And they were both bright red!
