Cooling system issues!

Hoping I can get some advice/insight into my problems.
Noticed that my radiator was a Valeo so changed it out with a Behr unit.
Also changed out the temperature sensor for good measure.
Prior to all the work my instrument cluster was showing no faults and temperature sensor was reading correctly.
Start the car up and ran it for a while. Just FYI, car is still up on jack stands.
No temperature reading. Also showing a bad coolant level sensor.
Also, fan comes on shortly after start up and runs full blast. But takes a few minutes.
I also changed out the thermostat, but can't imagine that would contribute to any of the problems.
Any ideas what's going on? Car has about $100k on it.
Because the sensors are so cheap, I might just change out the temperature sensor and coolant level sensor.

I suspect a bad temp sensor or damaged wiring for it.

2002 clk 430
I just had this problem in my 2005 CLK500. Thank you all for your help on this post!

I had to cut out the old elbow on the engine side and I ordered both pieces from Mercedes.

I will post here if I have any questions once I start installing the new parts.
