Any new tires you install will be quieter than the 10 year old tires you currently have on the car.
I very recently replaced the tires on my '14 CLS 550 with Continental ExtremeContact DWS06 Plus tires. They are reasonably quiet and have pretty good reviews.
Summer tires, because of their softer rubber compounds and tread design, are great for performance (grip) but are not great for even small amounts of snow, and they don't last as long as all-season tires because of the softer rubber compound.
All-season tires have a harder rubber compound so they trade some performance (grip) for longer life, and their tread design allows them to be used in small amounts of snow.
Winter tires, as you already know, are designed specifically for use in snow.
Where I live in the US, near Washington DC, we usually do not get a lot of snow, but we do get some, so an all-season tire is a good choice. I chose all-season tires because I do not need the performance advantage of a summer tire, and I do want the extra life of an all-season tire.
