Extended maintenance coverage
For Fidelity Platinum extended warranty, do they care about maintenance being done and reported in-order for them to cover it?
For example, if transmission fails and it called for a transmission flush months ago but you did it yourself, would they still cover it?

Most of them will want proof such as receipts, etc. I even go so far as to take videos so there is no doubt the service was done.
But yes, they're going to want to know that the routine maintenance was done.

What @GTConn said, as long as there is a history of services being performed at Mercedes recommended intervals, then no issue. If there is not such documentation either physical records or recoded on the vehicles Car Fax, then I suggest having at least an oil change preformed at the start of your Fidelity warranty coverage to have in your back pocket.
