AMG GTR 2021 (Euro version)
But that seat that wobbles, is that normal?

I've been watching some reviews on GTC and GTR lately and I came across this: watch at 6:47 and also at 7:07 and tell me what you think, because on a car of this level, I can't consider it normal...
an isolated case?

Those are the AMG Performance Seats. They are excellent. I've got them in my C63 and driven numerous AMG models with them all the way up to the GT Black Series. Never noticed any excessive wobbles or whatever. All seats move around under the forces and the weight of the driver. I'm usually not filming myself to see how much the seat moves, but here's a video from an AMG Driving Event I attended 6 years ago. The seat certainly moves, but as said nothing unusual. Mine did start to creak a bit over the last 6 years, but I suppose that's to be expected in a firm setup.

But in general, I love these seats. Super comfortable for me even on a 12 hour drive. I've done several such long road trips. There are slight differences between them, though, depending on the model. On mine, they fold in order for the rear passengers to get into the back seats in my C63 coupe and I have the thigh extension, which from what I remember the GT seats don't have. Mine are also ventilated, which makes a huge difference on a drive like this guy is doing in the video. I do work up a sweat in the canyons, and the ventilation keeps me comfortable and avoids a sweaty back.

Just because you've never noticed it on anything else before, doesn't mean it doesn't happen. The seat, particularly the seatback is a giant hinge. 100% of the pitch (forward/backward) stress is supported at the hinge point at the bottom back of the seat. Add in the pressure and weight of the driver, plus the G forces of bumps, acceleration, and braking, the seat back is going to flex. If this were a race bucket with lateral support construction, i.e. a support affixing the seatback to the bottom seat (basically completing a triangle), and the seatback was moving like it was, that would absolutely be a problem. That is not the case. This is a physics thing, and 100% happens with every general market vehicle, high performance AMG and all the way down to your Kia. Nothing to be concerned about.

the effect definitely looks a lot more exaggerated since its on a bumpy road with GT4 coilovers, anything outside of a perfectly paved track that car will be miserable to drive

And the seat back on my '18 GT R does not hinge.
