I use a Meguirs leather cleaner on the seats. It smells ok.
I use windex or plain water on the plastic. I don't believe in "treating" plastic with anything.
Don't take this as a flame but, I don't know why anyone would want to smell solvents, plastics, and adhesives. That stuff gives me a headache (as do most strong odors- even good ones). If someone wants that new car smell, open a tube of plastic cement and leave it under the seat.

For your dash, use 303. It will give the low gloss factory look. It also has the highest UV protection out of any product. For your leather, well, it all depends on what kind of leather you have. Clear-coated or premium. If it's clear-coated, then treat it like vinyl. Just use an MF and warm water, and maybe 303 for uv protection(personal choice). For MB nappa leather, use leatherique.
