2013 e350 Cab (A207)
Has anyone replaced the back up camera with one of better quality (higher resolution)?
Is there software that will allow selection of the rear camera while driving?

I would have thought the resolution on the display is the limiting factor. Its not very high and having a higher resolution camera would make no difference if the display can't use it.
Not sure if there is any aftermarket option to display it whilst driving. Nothing in the OEM system I know of. It would also be illegal in many countries, so would make sense for it not to be allowed, like video in motion.
