New to the world of MB, I found a 2016 E400 Cabriolet I'm interested in. Does anyone have any pro/con information to share on this model, please?

none when i drove one. I love the engine in the 400 - it just goes
the 16 will have the older software so you dont get the ambient lighting scenes - but not sure how it works in your neck of the woods (if you're in America). here in Australia they are optioned differently
