track may be different. 500E vs regular 124.
remember that the 500E had extensive modifications vs the regular 124. it was engineered to still look the same though.

Better to find a 3.27:1 rear from an early 260E or 300TE which will improve acceleration without any engine mods.
How much horsepower are you intending to add and how are you going to achieve it?
Stock suspension setup should be beefed up with better springs, shocks and swaybars for handling.

And don't forget new motor mounts !!!
the only clear plus i can see from doing this is the better brakes, but i don't see how buying upgraded rotors, pads etc. for both front and rear would not be a better idea than this?

First 500E differential as pointed out several times to you will reduce your acceleration due to it's high gearing.
The W124 chassis was not designed to accept the SL type rear without much modification.
Let's start with what engine you are installing.
How much torque and at what RPM is it being produced?
Manual or automatic transmission.
Track car....straight line ???, road course ???
Stock rear is much stronger then you think, but a lot depends on the answers to the above questions.
