drive a 2000 E320 (don't own)
A few questions
I have a 2000 Mercedes E320. I have, appears to be h2o under the oil cap, seems like a seasonal thing? It happened last year, then went away. Now its back 
. The car has like 60k and been very reliable to me. I have no issues except the water. Any ideas?
Also when is the recommended maintainence for the automatic trans fluid?

Depending on the amount of water on the cap , but it sounds to me like condensation.If you drive short distances you will experience this, not enough time for the engine to burn of normal condensation that occurs.As far as the trans fluid i changed mine @ 80k.

Some condensation on the bottom of the oil cap and in the top of the oil fill tube is normal for our cars. I see it in the winter sometimes with short trips. Disappears with long trips and/or warm weather.
Emulsion visible on the dipstick may be indicative of a head gasket leak. If it's only under the cap and not in the dipstick, I wouldn't worry about it.
If you really wanted to know for certain, get an oil analysis done. Only 20 bucks (Blackstone Labs), and a series of them will tell you a lot about the health of your engine.
