Not stock unfortunately.
What they do make is a race car version of the E55 AMG. This was of the W210 only.
The car still had four functioning doors, AC, 5 functioning seats with headrests, even power seats, etc. But it was missing a sunroof. Personally I hate sunroofs (very paranoid about leaks) so I'd get that car. Also has a different suspension set up and I think it has a different rear differential as well.
Very expensive car, and very rare. I've been lucky to see two of them exist before. I think it was more expensive than the normal E55 (even though it lost a sunroof).
Air conditioning is now considered to be "Active Safety". Ferrari boasts that its 360 Challenge Stradale (if you don't know what that is, it's their 8 cylinder mid engined enthusiast race car) has several safety features in its owners manual. The air conditioner is listed next to "powerful brakes" in the owner's manual.
