Has anyone seen this in their dash before?

I have a 96 E320 with 226K miles. Car is in excellent condition as I've spend a lot of money on maintenance over the years.

Took the car to gas station then drove to pick something up at a store.
Upon filling up at the station, I looked at the gas gauge and it read full. Everything else looked normal and I drove off.

About 15 mins later, I stopped at a store to get something and got back in the car. It took maybe 5 mins.
When I stated it up I got a low coolant error which is odd as I had a radiator flush about a month ago and I've never seen this error code in over 15 years of ownership.

I drove off and then I looked down at the gauges and noticed that the readings were odd.
The analog gas gauge now reads half tank and the digital temperature reads 59 degree F. Should be about 95 degrees.
There were no changes to the performance of the car.
Drove home and turned the car off and restarted and look at the digital dash now.

Does this mean there is a problem with the dashboard or is this something more serious like the computer?

Yes to Dash you have some issue with your dash (IC: Instrumment cluster)

there is a strip of contacts in the cluster that fail. Sometimes you can put a piece of cardboard pushed in between the contacts to correct this. I did it and it worked fine. There is a how to on the web somewhere, maybe here. Its easy to do
