The best Chev V8's (in my opinion) are the newer (pre-LS1, though) Vette motors, with auto transmission.
A donor car is helpful since then you have the ECU to run the fuel inj and transmission, plus accessory brackets for alternator, etc.
Your second best option, esp for durability, are the LT1 Vortec motors used in light trucks and police cars/impala SS up to 1994-1996. You may want to add aluminum heads.
You would be surprised at just how light an aluminum head and intake 350 is, probably just a bit over 400 lbs.
As far as who to install? You just gotta ask around locally or regionally.
I think as cheap as new cars are and low interest rates, I bought new, although I always have a project car or truck for hobby's sake.
