2 cats deleted, and would deleting this middle part help?

The other component with 2 pipes in, 2 pipes out is actually your resonator.
Removing the rear cats doesn't gain anything measurable unless you have some other significant mods. Removing the resonator will make the exhaust louder.
The exhaust still needs to have a "x-pipe" where you remove the resonator. If you don't the the exhaust note will sound quite different and may have a small negitive impact on low end torque

It's my understanding that removing the cats and resonator (x-pipe) will increase the sound. But you're gonna lose some low end torque. The good news is you'll make it up in top end horsepower.
This is the reason why I want to get an ECU tune. You will gain abut 25 rwtq, plus and additional 25 rwhp. Most of the tuners like Powerchip, can tailor the tune for what you're looking for.

Also, an X pipe generates a more exotic sound.....
