What is the IDEAL size/width/offset/etc. for 19" wheels on a W211?
Another question, would a 9'' wheel with a 39mm Offset fit the E? I know I'll know the answer to this question once the first one is answered

Anyway, to answer Black.E's question based on what I know:
In the front 9" ET39 can be a challenge. It is possible that it will fit, but there will be a risk that it will rub from inside. The inner clearance will be reduced by 1 cm.
Outside in the front should not be a problem, since it will extend something like 2 mm, and obviously 8.5" ET30 (Tomason) will fit without modifications since they give you a vehicle-specific TÜV document for these specs. The outer position of the wheel in a 9" ET39 will be 3 mm more inside than in a 8.5" ET30.
In the rear 9" ET39 will not resut in any challenges or problems or risks.

A 9" wheel with ET39 is only 2-3 mm more inside than the 8.5" ET30 mentioned earlier. And - honestly - I would not dare extending the wheel more than that unless the seller gives me a full money-back guarantee.
--> Max spacer would be something like 2 mm. = Very thin.
