No Acceleration/Power
Had a fuel pump "cap" change at my local stealers. Old one was leaking fuel all over from a broken outlet pipe.
On the way home, noticed there was no acceleration at all and she wouldn't really go past 40mph! Tried doing a kick down and would not accelerate, just lumbering. Will not even rev past 4k.
What could this be due to?

Fuel Pump/filter dirty or broken. If you have never replaced fuel filter/pump and have quite a few miles on her, I would definitely look in that direction.

We can all speculate about the problem or you simply go back and ask to get the diagnosis performed. This will be the fastest and most accurate way to start your troubleshooting. And since they did work on your car they might do it for free.
Good luck.

All bad.
Tried swapping the old bad one in again and made no difference. No errors or codes (according to him). Am distraught!

Stupid questions here:
Are your rear brakes getting really hot? If so, you might have an SBC Stop issue.
Might you by accident have your speed limiter on? Set on your Cruise control arm.
Just guesses, if your engine is not throwing codes, it might not be anything to do with it, but rather peripherals.
