E350 2006 Japanese spec's

Dear all, I'm using my e350 2006 now for 8 months, temperature after running the car with Normal driving speed will reach under the 100 line, couple of minutes, will drop one bar( i think to 90'C) two to three minutes, will go back under the line and so on, whatever if the weather hot or cold it will act the same, coolant level from January up to now is the same, no leak, fan will work normally with different speeds depends on the outside temperature, by the way i did an OBD2 test and my coolant temperature will reach 102 then drop down to 92 and so on, my themosate is new with opening temperature of 100 'C, please advise me if my car in a normal condition or not

It's normal. Every car does this. The difference is that 99% of other cars have the temp gauge buffered so small changes in temp like that are imperceptible. MB temp gauge is not buffered. You see the actual temp.

So it's normal then? No need to check anything?
