I have been looking for 19'' wheels. I really liked Vertini Monaco, but it seems that their 19'' wont work on 2011 e550. I don't want the wheels to be sticking out or flush. I would like the wheels to be a little inside the fender. I do not want to go with 20'' because i do not plan to lower the car.

Sticking or flush is the matter of offset, listed as ET on the rim and rim width. Google for on-line calculators for that.

25 mm of rubber on top of the rim? I hope you have very good dental coverage?
