I’ve tried this several times and it always comes back that the VIN is not found. Any tricks?

Sure the date of manufacture is part of the data card. If you really need your data card (for a new car), you can ask here (some members work for a dealer, some have paid for personal access etc.).

My vin is W1KZF8EBXPB139023 for a 2023 E350. Could someone decode that or tell me where to go (I'm used to people telling me where to go) to do it? Thanks in advance.

VIN number decoding does not provide any history of any kind. A VIN is simply an number assigned by a manufacturer that describes the vehicle.
If you are seeking maintenance information try carfax.com. Their report will cost about $45.

Also another site to try is mb.vin for a vin decoder.
You won't get any history information with a vin decoder. All vin decoders do is tell you what's in the car, no history information. Good for verifying whether it really has the lighting package or whatever option is being advertised, lots of times the ads lie about actual options included.
For history you want a Carfax or Autocheck or many other car history services out there. They all charge money for those reports though. You can search online for a cheap carfax and you'll come up with some results in the $4 range.
