Great video!! Very honest. Sure the car/truck is dated, but at the end of the day I wouldn't trade my 2009 G55 for very many other cars.
New amp under the seat, your choice of head unit. It will sound significantly better just with a proper amp in there.
There are a total of 8 channels in the OE system. You can get away with a 6 Channel setup if you combine the rear doors and cargo area speakers in parallel down to 2ohms. Factory subwoofer is DVC 2ohms. So you'll need an amp that can work at 2 ohms, 6 channels, with a built in DSP (very very important).
The AudioControl D-6.1200 would be my choice if I were to rip apart my fully upgraded and custom system again. Single DIN choice would be the Blaupunkt Bremen for the retro look but modern functionality.
Double DIN's work but the viewing angle while driving is terrible. I would recommend just a simple Single DIN with bluetooth and any other features you want. For a display screen, there are kits that mount screens above the AC vents that have Carplay and Android Auto. That, or you can mount a tablet there and do screen mirroring.
