Is G Wagon 2011 AWD (drives using all 4 wheels) or if it is 2WD normally but when I turn on the "differential locks" it will engage all 4 wheels?

4MATIC is a full time system via a chain-type transfer case in MB SUVs. Sedans use a geared “transfer case”, more like a power take-off.
Torque flows to all wheels all the time, usually with a slight bias to the rear axle by way of slightly different final drive ratios between front and rear axles.
Differential lock does just that. It prevents spinning of one axle, or one wheel, vs another. Locks are used when low friction or wheel slipping is expected, and unwanted. For example gravel, snow, mud or steep incline.
