I was wondering if there is a way to setup carplay for full screen on my 12inch display. I noticed that there is 2.5 " black space on either side of my 6" map when I use carplay.

Nope - Mercedes-coded restriction by design it seems. They wanted to make sure that the home and notifications buttons on the top and temperatures on the bottom right were always there without blocking CarPlay.
As said above, this is the state of affairs with MBUX 1.0. The screen is effectively too small to have space for the home and notifications touch buttons along with the proper aspect ratio CarPlay. It's properly full screen/width in models that still have COMAND NTG 5.5 like my C63S, and in the all-new models with MBUX 2.0 and larger screens.
