Coupe S vs Non-Coupe Non-S

I am in the process of learning about these cars so bear with me if its already been posted and I just didnt search well enough. I had been thinking about the GLC63S Coupe for a while because I wanted the S and like the styling of the coupe a little better. But over time the non-coupe has grown on me but, while I am willing to lose the S badge and 30ish horsepower (that can just be tuned back up), I am not willing to lose launch control. Unlike a lot of people I will actually drag race this thing from time to time for fun up at the new england dragway so I dont want to lose launch control in going with the non-S. I read some reports that it exists in non-S without race mode by just going to sport+, slamming the brake, and slamming the gas. Is that still the case for 2021? Also, anything else other then race mode and the active motor mounts I lose goign non-S, non-coupe?

HP, Race Mode and Motor Mounts are the main things.

Race starts exist in a non-S via the procedure you mentioned. I was under the impression you have to do that even in Race Mode to get the best 'start'.

This page says clearly that the 2021 non-S has the "Race Start" function:

Correct, you lose the Race Mode but not Launch(Race Start) Control.

My best 0-60's are in Race Mode which turns off all safety features and increases the shift points. It is not even drivable in race mode unless you are going all out.....
