Yours may be faulty then, as my UK April 2019 GLE definitely shows the warning for the middle and rear seat rows (7 seat model) ?

Not faulty, shows warning when you start car until you press button on steering wheel but doesn't warn if someone in rear seats with no seat belt on, what you see on start up is a reminder for 2nd and 3rd row not a warning - test it.

If I clip all the seat belts in on the middle and rear rows, I don't get the warning / reminder on the dash at all. Yours does something different?

The idea of a seat belt warning is that if the car moves with a passenger on the seat with no seat belt on you get a visual and accoustic warning, this happens on the front seats but not the 2nd or third row.
