Wireless CarPlay

However, the Mercedes infotainment is so good that I’ve not had the need to use this, so it lives inside my glovebox unused.

You must unpair "MBUX *****" item in iPhone's bluetooth settings if you plan to use dongle.
If you keep "MBUX *****" in the iPhones bluetooth list, Dongle and MBUX will connect to your iPhone simultaneously.
In this case, if you will get an incoming WhatsApp call it will be totally muted and after that MBUX audio (including Radio and all other sources) will be muted until ignition off.
I have this problem, hope nobody else.

1. remove BT connection with phone and car. (only keep dongle setting to car)
2. Connect to dongle WiFi with WiFi password: 12345678
3. open browser in phone and link to http://192.168.50.2
4. choose setting in right + down location
5. turn off GPS setting (on -> off)
6. change frame rate from 0 to 30 (0 -> 30)
7. I also modify delay from 1000 to 300
8. back up original page and system will save setting automatically.
9. remove+reconnect the usb cable/power and let dongle reboot + reconnect.
With above settings, I can make a call through APP.

First step (of your list) solves the problem with internet calls.
Everything will be ok until binding iPhone with MBUX by bluetooth directly (that is not necessery in case of using that Dongle).
I used that Dongle for a while, but finally switched to MB's navigation, because of non-fullscreen CarPlay functionality (that is btw MB's issue, not Apple) and, imho, better MBUX's music app GUI.
