I have the 20 inch AMG wheels with Michelin tires and my fuel cap says to do 31 PSI front and back. Last fill up I did was 34 PSI and I noticed the ride was a tad stiffer so I just stick to 31 PSI like my fuel door says. This usually helps with tire wear, fuel efficiency, ride comfort etc.
I vehemently agree with you and Ron. I use the fuel door for my 21” tires on my 2022 GLE 4-matic. It’s an SUV, and the princess and the pea standard is for cars. Truth be told, northern Ohio chuckholes in roads eat small tires and rims. My choice is thousands for new tires due to low tire pressure or more money for our vacations. Easy decision.

Our cars show pressures to 140 mph, if that's your thing.
Recommended inflation pressures are standardized industry-wide at a specific temperature, which I think is 68° Fahrenheit (20C). All cars have the same standard temperature.

Perhaps the higher max pressures on the fuel door flap for the 7-seater with 21" wheels is because those are run-flat tires? My 5-seater with 21" wheels has the non-run flat tires and the fuel door sticker notes max 31F and 39R.
I have a 5-seater with 21" wmax pressure of 38F and 44R on the fuel door flap. I don’t think there is any difference between 5 and 7 seater regarding tire pressure.

Do you have the 21" AMG staggered or 21" twin 5-spoke, not that it should matter? Per my post #12 above my '20 with staggered loaded pressures are 31/39 psi. Maybe they changed it with different model years?

I have the non-AMG 21" twin 5-spoke.

Our Michelin 21" staggered tires run on 31 Psi as per the fuel filler door. Smooth ride and tire foot print is normal.
