I don't see any snow mode in my 22 GLE OM, but my AMG supplement describes the snowflake icon as "slippery" mode. I have yet to use it, but there's only this from the AMG manual :
I've been in I* around town most days, and C on highway. Tried Race a couple of times (RJA enabled this mode thru coding). Used Trail a couple of times to pass thru some deep puddles. Not much need for slippery in Florida. Even in heavy rain my I* mode is fine (of course I slow down due to the poor conditions). Maybe someone else knows more, but this is all I can find.

At low speeds Off-Road might be best in snow, but I'd think ECO would be overall closest to a dedicated Snow mode, so that's what I use. The exception would be if ECO forces the vehicle into 2WD more often, but I don't think that's the case with the GLE. It is odd that Mercedes doesn't offer a snow mode. I'll wager more people drive on snow and/or ice far more frequently than they drive off-road.

Yes, my 2022 GLE53 AMG has "Slippery" mode.

Was out this morning on snow covered roads and experimented with available driving profiles a little. ECO mode seemed to off the best control but the difference between ECO and Comfort was barely noticeable.
