I have 2020 GLE350 4 Matic, based on the spec, the factory coolant can last for 10 years.
The car is about 5-6 years old, the coolant color is per picture shown. The coolant color is not clear and with sour smell. Do you recommend I should do coolant change? Is Zerex G40 good for the replacement?

I change mine every 3 years. You can find the appropriate fluid and manufacturer on the Mercedes Operating Fluids Site. The coolant information is here. You'll need to look up your engine (320.1) and determine which specification is required, then click on the appropriate specification to find acceptable products for your particular case.
Use distilled water when diluting your anti freeze/coolant.
If it doesn’t specifically recommend a 50/50 concentration, that is the best.
For a lot of models, they really don’t want you to change the coolant on a regular schedule.
A lot of them are on condition by testing at regular intervals.
