About to pull the trigger on a GLE63 "non-s" but have a few questions
2018 w/ 28k miles
2019 w/ 15k miles ($9k more expensive)
Literally, identical builds. Both are out of warranty
I'm leaning towards the 2018, but I want to confirm there weren't any significant changes between 2018 and 2019.
Also, and more importantly, it doesn't have sport exhaust, which is holding me up. Can I add the sport exhaust with valves and etc.? Are there aftermarket companies that do something similar? I don't want always open or always closed (or a stupid remote control). I want it to automatically open and close and get a nice idle, burble, etc.

No significant changes 18 to 19, possibly no changes at all to the 63. Model lineup changed (350 deleted) but each surviving model was unchanged.
FYI for the price range you are looking at, you can buy a one year newer (2019-2020) CPO Cayenne S with some factory warranty remaining and 2 more years of CPO. Something to consider. You seem pretty attached to the V8, I get it. But give the Cayenne a brief thought. Porsches hold value better than almost any other car.

I also think they're a bit different. The 63 is like... gentlemen's express. I want to drive 120mph in comfort down to Houston. The Porsche is more dynamic and meant to be closer to a sports car. I really don't want a sport SUV.
Truth be told, I want a bigger garage so I can get a Tahoe and supercharge it to 700hp. That is how much value want "sport." I live in Dallas where there are very few turns. My commute is literally 2.1 miles through downtown (getting cut down by 25% to 1.6 in Feb). Other than driving to the track, I dont do anything socially more than 7 or 8 miles away. I do make the occasional 30-40 mile drive for work trips out of the office about 1-2x a week, but they're generally just outside rush hour, so it's still pretty congested. If there's ever a time I want "sporty", I have the Viper, the track/race car and even a simulator, lol. I think the sportiness and agility of the Porsche is a bug, not a feature.

I may go aftermarket just for more power but this may be a good cost effective solution. I want about 725-750 crank hp

With regard to the exhaust: I spoke to Eurocharged. Super helpful. They told me to stick with non-PE if I'm doing downpipes and Stage 2. I'll do that in about a month- just want to shake the car down first.
Then comes the plate:

Can anyone tell me exactly what the "S" package has other than exhaust and tuning? This seems like some sort of unsolvable mystery.

Those are the important things. The other two are cosmetic - CF engine cover and Nappa/Alcantara AMG steering wheel. Alcantara is great when new, but wears off fast over the years. In my experience, standard Nappa leather with Perforated leather grips (instead of Alcantara) AMG steering wheel is more practical.
