Basic Carrier Bar keys work for multiple bars
I bought new carrier bars for my 2024 GLS 63 and guess what....the keys from my carrier bars on my old 2014 ML 550 (that I bought perhaps in 2017) also worked on these new carrier bars.
I'm curious how many different keys there actually are. It doesn't give me a ton of confidence, considering I bought these bars to hold the $2000 AMG roof box.

Sadly, many accessories like that don't have many (or any key options) and keep the "honest" thieves away. Presumably only people with other Mercedes that have bars would have the key which significantly limits the opportunity, but isn't foolproof. Possibly a good locksmith could remove the lock cylinder and change the keying as well as cut you a custom key. Be certain you get extras and put one somewhere that you can always get to it.
