does any ones ml320 get really hot hunder the hood

I bought a used 2002 Mercedes ML320 with 37,000 and iv never seen my cars front fan thing turn on. Most mechanics just tell me it turns on when it needs to and its always hot the way it is like any other engine (I figured other cars just heat up cause its an 'engine'). When I open my hood the heat really its your face and you can tell that way. I never really know which thermometer to look at when your checking your engines temp. Is it the one with all the other gauges in the front since the sensor is near the engine?

2001 ML320
I live in central Texas and on a regular basis the ambient air temp is well over 80 degrees F (regularly over 100!) and our temp guage shows a little over 80 degrees C consistantly.
Now when running the A/C the fans should be on by default. In our case the A/C is on almost year round.... so that being the case we have really never heard our fans NOT being on...
