Mercedes cars have an inbuilt function where it will open the fresh air setting, if you have it set to recirculated, every couple of minutes when the outside air temp is under 5 deg C. I find this most frustrating and even dangerous when I constantly need to switch it back on when driving in traffic/ cold weather due to pollution from the car in front/ wood smoke or just general pollution.

I've owned a number of Mercedes and one of their characteristics universally seems to overengineered HVAC controls. For example, in my 2005 W203 C240 Estate, if the ambient temp outside is below 64* F, I cannot turn the AC on unless I have it a MAX COLD as the car only will bring in outside ambient air (does not take into account that the interior of the car is warmer than the outside air temp).
Anyways, what you describe is a common design feature in all modern cars. Most car manufacturers have an automatic shut-off for the recirculate air function and no I don't think there is anything you can do to override that unfortunately.
