In 75W-90, the W stands for Winter.
The gasket on the fill and drain plugs is an o-ring. They are replaced because rubber doesn't last forever.

That's why I use Buna-N aviation o-rings. And it's not that they don't last forever. The reason you replace them with new ones is that once you remove them, they are deformed and will likely not make the same contact and seal with the surface when you reinstall them.
