Replacing REar Shocks on my 2000 E320 Wagon Help.

Hey everyone, so yesterday my rear shock broke. And we are going to replace them tomorrow. My question is once the new shock is in, do we need to add hydraulic fluid. It does not have air ride. If we need to add hydraulic fluid, how do we bleed the shocks and drain the old fluid? We haven't ever replaced them before. I really appreciate the help.
