A few options:
1. Find someone with a Star system and have them reprogram the base height.
2. Lowering Links. You fool the ride height sensors by using adjustable sensor mounting brackets.
3. Lowering Module - Aftermarket "box" that takes in ride height sensor data in and adjust new offset signal data out. Can use remote to adjust on the fly the offset amount. Usually +/- 2" from the base setting.
4. Scrap Airmatic system for aftermarket struts/springs that are less than stock height or bag system.

Keep in mind that as ride height changes, the other alignment angles also change. Additional components to keep "geometry" correct maybe needed.

Weird... with a Snap-On System, we are able to lowering the car and it's perfect.... but when I start the car, the suspension goes back to its normal state....

Something we did not correctly?

No. You will be physically be moving the sensor to a new height.
