Sinking break pedal after new breaks

Hey guys, newbie here. Sorry if this has already been posted but I've looked through threads all day, couldn't find anything that sounds like my issue and I'm freaking out. I noticed my brake pedal was catching lower than usual, pads were pretty low so I decided to change the brakes. Got new pads and rotors front and rear. I take it to a shop that specializes in Mercedes and have worked with them before, always a great job. No improvement with the pedal, if anything I think it got worse. The brakes work but pedal engages lower than before. If I push it hard enough while stopped, it goes almost all the way to the floor. I've tried all the suggestions, pumped it with the engine off and it gets stiff and stays stiff. Pumping with the engine running doesn't do anything. My service advisor said it's normal until the pads and rotors get used to each other and should be fine after a couple of hundred miles. Does that sound legit? Not sure if this could do any damage but before that I replaced the brakes, I got a plastic bag sucked in between pad and rotor. Pulled most of it out and I assume the rest burned off. Could that have caused any damage to the caliper or something? After reading about this all day, only conclusion I can come up with is the master cylinder but don't know. Really sorry for the long post but I don't know if driving a couple of hundred miles like that is a good idea. Thanks in advance.
