BenzBallin, Possibly can be done by someone who has Star/DAS software. Find a local indy (a Benz specialist) who has the software and ask them how much they would charge you to hook up and disable the steering wheel paddles (and if / how much they would charge you if they are unable to do it) ... My guess would be $50-$100.
That's prolly your only option. While your at it see if they can set the "S" button for the tranny shift to default to "S" instead of "C" so the vehicle starts in "S" mode and you have all 7 transmission gears by default. I've been wondering about that one myself.

Yea, there is a button in the center below the AC controls that has printed something like C/S on it. The tranny defaults to "C" (comfort) which forces it to start off in second gear. If I remember there is a little LED "C" (and "S" if selected) that is displayed in the lower center of the instrument cluster to let you know what has been selected.
The inconvenience is having to push the button every time you start to get the tranny to start off in first gear ("S" sport mode).

Correction, my dash buttons show E / S not C / S.
I use first gear ("S") as I light foot away from a stop light to get the barge moving, then start pressing into it once in second/third. It's an old hyper-miler trick (called Newton's first law) that helps to keep average MPG closer to 20.
