Are bi xenon headlamps std on the 2005 S 500?
To confirm you have a xenon bulb turn on the low beam - it flashes really bright, dims down immediately and gradually reaches full brightness again. It's more pronounced when the bulbs are cold.
To test bi-xenon flash your high beams - you should see the xenon beam "extending" up immediately.
To observe self-levelling turn on the headlights with the engine off then start the car - you should see the beams dancing down and back up.

If they have indeed screwed you with a cheap knock off, I personally would be really pissed and demand an OEM headlight.
