Will changing out my own taillight invalidate my warranty?
I bought the extended warranty (from the dealership) on my 2015 S550. Recently my tail-light cover was cracked (lights all still work, just plastic covering broke). I am thinking about purchasing a genuine OEM tailight assembly replacement and either installing it myself or having an independant shop replace it for me.
However, I think i read somewhere that my warranty would be invalidated if i take my car to a non-authorized shop for repairs or do it myself? Is this true? How does Mercedes track this? When trying to purchase the tail-light part online, all websites ask for VIN number of my car. Is it so that they can track this?

No, It will not void your warranty... Your not altering anything or replacing a part with an aftermarket part. When ordering online they ask for the VIN so they make sure you are sent the correct part... There are different variants of parts that are VIN specific. They are not trying to track what's being done to the car.
