I found a few cars with what looks like IPads on the back of the front seats. What can you do on them?

Good question! They are in my car. Have never sat back there and tried to operate them.

Videos for the kids and you need them to adjust the rear multi contour seats.

My wife actually likes the rear seats better than the front. But I hate to admit that we don't use the screens. It's not a touchscreen so you have to use the remote control for each screen. It's old school tech. There are a lot of things you "can" do with them, like stream movies and such, but MB never updated the interfaces to make it easy and simple. All external device interfaces require cables, not bluetooth or wifi for rear screens. We'll be road tripping at the end of the month, and my daughter can listen to her music and watch videos through the rear wireless headphones so I can play different audio through the car speakers. That's a really nice feature, but just about the only one we use.
